The 21 Day Fix is such an amazing program. It’s one of my favorite programs I’ve ever done. Not only that, I learned SO much about nutrition and what eating clean should really look like! Here are recipes to keep you on track and sticking to the plan! They are divided up by meals! Also, color of container is listed at the end! Ingredients: 1 egg or ¼ cup of egg beaters, deli sliced turkey (fresh – not prepackaged!), fresh salsa (1/4 of a green container)
Instructions: Scramble eggs and add in salsa. Wrap the eggs in the sliced turkey to create a burrito!
Containers: 1 red, ¼ green
Ingredients: 1 banana, 2 eggs (1/4 cup egg beaters), ½ cup of old fashioned oats, ¼ cup unsweetened apple sauce, 1 teaspoon vanilla extract, ½ teaspoon of cinnamon
Instructions: combine all of the above in a blender or magic bullet. Cook into pancakes!
Containers: For entire batter – 1 red, 1 purple, 1 yellow. If you only eat half – half those containers!
Sweet potato fries
Ingredients: 1 sweet potato, olive oil, chili powder, fresh lime juice
Instructions: Cut sweet potato into fries (skin on). Toss is olive oil, 1 teaspoon of chili powder, and fresh squeezed lime juice. Bake in oven on 400 degrees for 25 minutes.
Containers: 1 yellow, 1 teaspoon
Stuffed Chicken Pita Pockets
Ingredients: grilled chicken, whole wheat pita, fresh tomato and spinach, 1 blue container of hummus
Instructions: cook chicken (use 1 of your tablespoons for olive oil/coconut oil to cook if you like!). Stuff all ingredients into whole wheat or whole grain pita!
Containers: 1 red, 1 yellow, 1 green, 1 blue, 1 teaspoon (olive oil, if you used it!)
Ingredients: 2 slices of fresh deli turkey breast, 1 whole grain wrap, 1 blue container of hummus, fresh tomato, spinach, and onion
Instructions: Spread hummus on wrap, and fill with the rest of the ingredients! Toast on Panini maker for a warm sandwich!
Containers: 1 red, 1 yellow, 1 green, 1 blue
Chicken Stuffed Sweet Potato:
Ingredients: grilled chicken, 1 medium sweet potato, veggies of choice (I did peppers and onions), olive oil/coconut oil, feta cheese
Instructions: Cook chicken and veggies in oil of choice. Cook sweet potato. Pile chicken/veggie combo in sweet potato, top with feta cheese and put back in the oven for a few minutes to melt cheese.
Containers: 1 red, 1 yellow, 1 green, 1 blue, 1 teaspoon
Ingredients: 1 can of tuna (in water, not oil!), fresh spinach, cucumbers, and cherry tomatoes, 21 Day Fix balsamic vinegar (see recipe in book), olive oil
Instructions: Combine all of the above ingredients! Sprinkle with black pepper to taste
Containers: 1 red, 1 green, 1 orange, 1 teaspoon
Chicken Stir Fry
Ingredients: chicken breast, fresh veggies of choice (zucchini, peppers, carrots, broccoli), brown rice, coconut oil
Instructions: Cook chicken breast and veggies in coconut oil stove top. Toss in brown rice when cooked.
Containers: 1 red, 1 green, 1 yellow, 1 tsp
Ingredients: 1 pound of lean ground turkey, fresh salsa( 1/4 green), shredded cheddar cheese, fresh peppers( 1/2 green), spinach (1 green)
Instructions: Make 21 Day Fix Taco Seasoning (recipe found in book) and cook ground beef stove top. Once cooked through, lay on a bed of spinach. Toss in fresh peppers, fresh salsa, and top with cheese.
Containers: 1 red, 2 green, 1 blue
Ingredients: 1 pound of chicken breast or chicken tenderloins and 1 container of fresh salsa
Instructions: Put half the container and the pound of chicken in a crockpot. Cook on low for 6 hours or high for 4 hours.
Containers: 1 red, ½ Green
Ingredients: fresh tomato, fresh onion, 1 pound ground lean turkey, cheddar cheese, greek yogurt, 1 can kidney beans, chili powder, Himalayan sea salt, fresh ground pepper
Instructions: Dice up onion and tomato, and puree it in a blender or magic bullet. Once in liquid form, put it in crock pot with uncooked turkey, can of beans, and 1 tablespoon of chili powder, salt and pepper to liking. Cook on high for 6 hours or low for 8 hours. **HINT : Ground turkey cooks differently in the crock pot – be sure to check it periodically to see if it needs more/less time!** Top with a tiny dollop of 0% plain greek yogurt and shredded cheddar cheese
Containers: 1 red, 1 yellow, 1 green, ½-1 blue (depending on amount of cheese used)
Sweet Potato Nachos
Ingredients: 2 sweet potatoes, 1/2 pound of lean ground turkey, shredded cheese, black beans, salsa, greek yogurt, banana peppers, jalapeños (all optional toppings!)
Instructions: Peel 2 sweet potatoes, and cut them into chips – make these thin! Maybe 1/8 of an inch, as thin as you can comfortably cut them without adding some of your finger to the meal. Toss them in 1 tablespoon of olive oil to make sure they are coated. Cover a cookie sheet with parchment paper, and line the sweet potato chips up without touching each other. Bake on 450 degrees for 10 minutes, and flip them over for another 10 minutes. Watch them carefully for burning, and take them out sooner if they are. While sweet potatoes are cooking, cook 1/2 pound of lean ground turkey. Drain grease, add 1/4 cup of water, 1/2 tablespoon of equal parts chili powder and oregano, 1 teaspoon of garlic powder, and 1/2 teaspoon of red pepper flakes. Let simmer until chips are cooked. Warm black beans in microwave or stovetop.On a plate, put sweet potato chips as the bottom layer, cover with a spoonful of ground turkey and a spoonful of black beans (drained). Top with shredded cheese to taste (I used vegan cheese here, but any will work!) and microwave for 60 seconds to melt cheese. Top with your favorites. I did fresh banana peppers, yellow onion, fresh salsa, and greek yogurt!
Containers: (Depending on topping choices – for mine above): 1 red, 1 yellow, 1 teaspoon, 1/2 blue, 1/2 green
Ingredients: 1 scoop chocolate shakeology, 1 teaspoon coconut oil, 1 teaspoon natural peanut butter
Instructions: Melt the coconut oil and PB in the microwave. Add in Shakeo and form squares. Let harden in fridge for a few minutes.
Containers: 1 red and 2 teaspoons
Ingredients: 1 whole apple, 1 red container of 0% plain greek yogurt, cinnamon, honey
Instructions: peel and slice apple, warm it stove top or in microwave. Cover it with yogurt, honey and cinnamon.
Containers: 1 purple, 1 red, 1 natural sweetener (2 are permitted per day. Honey is one of these)
Ingredients: 1 purple container of frozen strawberries, juice of ½ fresh lemon, 1 teaspoon honey, ½ red container of 0% plain greek yogurt
Instructions: Put all of the above ingredients in a food processor until consistency is sorbet like
